The main kitchen area in the restaurant does not have Central AC. It does have a series of large ventilation fans that are located directly above the chef station where all of the ovens, stoves, griddles, and grills are located. The ventilation fans aren’t as fantastic as AC, but it really does get rid of a lot of our excess heat. The cooks and repair staff are all hot, but they usually manage quite well! Last Monday evening was a really unpleasant story. The ventilation fan in the bedroom was stuck and not running. I have been kvetching about the ventilation fans for at least 12 weeks. The things sound like it is on its last leg and it is just as rusty as it is loud. The main ventilation fan has been there since the early fifties when the restaurant was built. I contacted the authorized heating and AC dealership that we use for all of our repairs. I couldn’t get anyone at the restaurant until the following day. One of the dishwashers quit because I couldn’t get the fan fixed the previous evening. I did everything that I could to get repairs for the ventilation fan on Monday evening and so the repair dealer was there bright and early on Monday morning. One of the executive chefs called me around 2 p.m. on Monday to see if the ventilation concern had been taken care of. I think the chef was going to tell myself and others that he was sick if he had to deal with another evening of horrible and humid temperatures in the kitchen. Half of the employees could care less about their tasks.
